It’s going to be an off-kilter day for so many of us. The election results frighten me and even if the election goes the way I wish, the unknown response to it scares me. However, Ann made blue donkey cookies. Yes, this is one of the many reasons I love her. When she texted me that the other night all I wanted to do was call my Mom and tell her. She would have been tickled.
I just finished up a consult with my physical therapist. I love him. We’re going to do the water therapy again but they can’t get me in until December 18 so I’ll work with him until then. Boy, are all those copays gonna add up. Oh well. I’m lucky to have the insurance I do so I shouldn’t complain, but ugh just the same. And man did my neck hurt afterward.
I want to write but my thoughts are muddled. I think it’s my mind’s way of protecting me. I kinda feel like the boys used to on Christmas Eve when they’d want to go to bed super early just to get the night over with.
In other news I’ve been busy watching the brilliant colors fade.
Quick easy meal: skillet sausage with white beans and kale. I upped the kale to bean ratio because my body is iffy about beans. I think the soy sauce is what makes it. You can’t tell it’s in there but it gives it a great depth of flavor. We cut up our kielbasa and did it all on top of the stove.
Last night we had Dover sole and it was just heavenly. We aren’t eating as much fish as we used to just because the prices have gone up so. However, Cheese & Crackers had Dover sole relatively cheap so we splurged. We just salt and peppered the filets, dusted them with cornstarch and sautéed them briefly in olive oil, then topped with a brown butter lemon sauce. A few boiled little gold potatoes (which also loved the brown butter lemon sauce) and a simple arugula salad. SOOOOO good.
And the Heavenly Blues just keep on going. They are working so hard even on a rainy day like today.
My walking is a bit better so I am perusing spots for a wander. Wisconsin perhaps? Suggestions welcome.
Onward because it’s the only way.
