This morning I told Ernie I’d like a fried egg sandwich for breakfast. He’s so good at them and he bought the expensive gluten free bread (yay Canyon Bakehouse) so I knew it would be good. I asked him to leave the yolks a bit runny even though I knew it would be messy.
First lesson of the day:
BE CAREFUL WHAT YOU ASK FOR
It was a thing of beauty but my first bite created an incredible laughable mess. I meekly accepted Ernie’s offer of a knife and fork.
It was a completely different experience than crunching down on my handheld sandwich. A bite with yolk oozing over it all was rich and a bit salty. A bite with lettuce added cool crispness and the pieces of bread drenched in yolk and a bit of the pepper he sprinkled on top felt extraordinarily decadent, voluptuous, and textured. It all felt like a sensual and expensive high end restaurant dish.
Second lesson of the day:
THE WAY YOU APPROACH SOMETHING CHANGES THE EXPERIENCE
I started thinking about different ways we could do this. Open faced with a sprinkle of sumac or Aleppo pepper or smoked paprika on top. Open faced on top of a pile of crispy lettuce or sautéed salad turnips. As a sandwich but with some flavored mayonnaise or pesto or the like. Ohhh, maybe with a schmear of hummus?
Third lesson of the day:
PLEASURE OPENS YOU TO CREATIVITY
That was certainly an unexpected breakfast. Funny how everyday moments can surprise you.
