This morning we were low on flour so Ernie cobbled together a combination of various regular and gluten free flours for the biscuits. They were crumblier than usual but had a delightfully crunchy bottom yet still with a nice fluffy interior. Delightful. Hans was back and helped him.
I have the best friends. Thank you, Chris. This book is wonderful!
Speaking of gifts, my friend Teri has given me many, but in terms of tangible things this is one of my very favorites. I love this blanket. I use it year round one way or another. It’s perfect on days when it’s cool out but you can’t bear to close the window.
In the unattractive but absolutely delicious food category I give you scrambled eggs with leftover roast turnips and peppers with a side of avocado.
Picking this up again… I must admit I was a bit blue not to be at Mark Rubel’s memorial but I hunkered down and got some work done. Ernie gave a full report when he got home. He commented in amazement how many people had come up to him. I shook my head. “You are LOVED, baby, you are loved.” He never fully believes it. My work will be done if he ever does.
Our standard comfort food of roast chicken thighs with sweet potato and kale, with a dash of smoked paprika.
Lately we buy a package of chicken thighs, there are usually five, we roast them at high heat and have the vegetables with one chicken thigh each. Then the next day we make chicken pot pie wit the leftover vegetables and chicken. We augment that with whatever vegetables we have on hand, this week it was carrots, more sweet potato, leeks, red peppers, green peppers until the casserole is full and then add a white sauce and some frozen peas, top it off with a biscuit crust. That gives us dinner for at least two more nights.
Fried egg sandwich with extra lettuce.
Done. I’ll miss voting in person but happy to have it done.
Onward.
Love,
Cynthia
Mary and I early voted in Urbana at Brookens yesterday . Felt good to have it done, but won't rest easily until the day after, and we have won, and there is no violence.
:) :) :)
You and Ernie are both well-loved by many!
