Biscuit Day #608
I had another eggplant success the other day. I used a NYT recipe for Bulgogi Eggplant. I didn’t exactly follow it (surprise, surprise) but I gotta say it was easy and good. Here it is with my improvements. Ahem.
Cynthia’s Bulgogi Eggplant
1 globe eggplant, cut into one inch cubes, unpeeled.
1 tablespoons soy sauce
1 tablespoons maple syrup
1/4 season garlic powder (for those of you that can eat garlic)
Pinch red pepper flakes
Coarse ground black pepper
1 green onion, cut into thin diagonal slices
Mix soy sauce, maple syrup, garlic powder and red pepper flakes and set aside.
Heat oven to 450 degrees. Toss eggplant cubes with about a tablespoon of oil and place on sheet pan. Roast 20 minutes. Drizzle the eggplant with the soy maple mixture, toss them a bit and then put back in oven for 5-10 minutes. It probably would be good if you ran it under a broiler to get a bit more caramelization on it. Serve on rice with black pepper and sliced green onion on top.

In other news, I am finally back to hitting Genius Level on the New York Times Spelling Bee on a regular basis. Once I got sick from pneumonia my mind just drew a line in the sand, and said that I couldn’t do it, so I had no choice but to agree. I just couldn’t get my mind to work…it’s amazing how your physical health affects your mind. Then of course the Sepsis Ordeal™ didn’t help things, but evidently my brain is starting to let me think and accomplish things again, at least bit by bit. I’m not even trying to hit Queen Bee status, I just gratefully accept Genius Level and move on.
